Abstract The yeast autolysis process - an endogenous and irreversible lytic event, which occurs in cells caused by the action of intracellular enzymes, proteases carbohydrases is a well-known economic process, however, there constant risk serious microbial contamination since are many nutrients broth this slow, favoring growing pathogens. present work comes up with attempt to accelerate Saccharomyces cerevisiae focus on high yield extract production through fast, simple technology. proposed strategy based decreasing pH suspension at beginning acid shock activate cell autolytic system under stressful conditions temperature pH. influence concentration, temperature, time yields were studied. best proteins total solids observed for treated (H2SO4 10 µL/g dried final 4.4) 60 °C (36, 84% protein 48, 47% extracted) gradual increase 45 (41.20% 58.48% extracted). could speed control reached about 30% same experiment, more than 43% 12 h. When considering industrial scale, it be noted that was very important productivity as well avoiding pathogen autolysis. These results relevant purposes extract, autolyzed glucan mannan.
